Joe,The temperature floutuaticn is more critical than a high of 72 for red wine. If you are using 50-60 gal barrels, it will take the temp at that level without much trouble for part of the year, if fact, a full barrel would likely remain lower than the room high temp given night temp is involved. The barrel will likely evaporate from the barrel faster at higher temps and you may have to top off more frequently. Also, the aging process takes place slightly faster than it would at lower temperatures but it should not be detrimental. You may want to consider using a room chiller during the warmest time of the year if it's feasible and you want perfect conditions.
